GRILLED SAUSAGE AND SUMMER SQUASH
PAIRS WELL WITH: 2018 RED V BLEND
1 pound Italian sausage
2 red onion, sliced
2 zucchini, halved
2 yellow squash, sliced in half moons
1 lemon, juiced
freshly ground pepper
In a skillet over medium heat, cook the sausages. Once fully cooked, remove sausages from the heat with tongs. Pour the rendered sausage fat into a heatproof bowl.
Fire up the grill. Meanwhile, toss the vegetables in the rendered fat, then char evenly on both sides. If desired, add the cooked sausage to the grill to reheat and add char.
Serve on a platter, squeeze fresh lemon juice over the vegetables and season with salt and pepper to taste. Enjoy with Edna Valley Vineyard’s 2018 Red V Blend. Cheers!
