30-Minute One-Pot Baked Salmon


  • 1 bunch kale, sliced
  • 1/2 head broccoli, cut into florets
  • 6 tablespoons olive oil
  • Salt
  • Pepper
  • 4 skinless salmon fillets
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 cup fresh dill
  • 1 teaspoon Dijon mustard


1. Preheat oven to 450°F.

2. On a baking sheet, toss the kale and broccoli florets with 2 tablespoons oil and spread in an even layer and season with salt and pepper.  Bake for 6 minutes. Stir. Season the salmon with salt and pepper and add to the baking sheet.

3. Bake until salmon is cooked through, about 10 minutes. Whisk together the lemon zest, juice, dill, mustard, and remaining 1/4 cup (4 tablespoons) oil until the mixture emulsifies. Season with salt and pepper. Drizzle salmon and vegetables with dressing before serving.
